Homemade Mayonnaise.

So homemade mayonnaise...

It takes five minutes or less to make, you can control the quality of the ingredients you use, and the best part is it tastes delicious (unless you ask my hubs who has a severe aversion to mayo).

Anywho... just follow these simple steps for your very own homemade mayo.

Prepare the ingredients:
1 egg
1 teaspoon salt (go for sea salt)
1 tablespoon vinegar (I use apple cider vinegar)
1 1/2 c to 1 2/3 c oil (light oil like safflower or sunflower)

You will need a food processor to emulsify the ingredients together.

To the food processor, add the egg, salt, and vinegar. *Make sure you have the oil measured and ready to go before you add the vinegar to the egg, because the vinegar starts to cook the egg.*





Turn on the food processor then slowly start drizzling the oil into the processor. *It is very important that you keep a slow and steady stream of oil otherwise it might not emulsify.*



After just a minute or so, the ingredients will be combined and you'll have your very own mayo! It's that cinch-y.

I store my mayonnaise in a glass mason jar with a plastic lid (the metal lids have a tendency to react with the salt and rust).




This homemade mayo will last in the fridge for a couple of weeks.
